Can this flooring be installed on top of the old flooring?

It can. All substrates must be flat and free of dust, loose particles, paint, drywall compound, and structurally sound.
What is the Janka rating?

Vinyl planks do not use a Janka rating however they use an AC rating as well as laminate. This product is rated for a light commercial which would make it an AC3 rating.
Can this be installed directly ontop of a dimpled vapor barrier (Dörken Delta-FL or DMX 1-step)?

Can any of the waterproof vinyl planks be installed as a shower floor?

The Market & Main Waterproof Vinyl Planks are 100% waterproof so they will not get damaged as a shower floor. That being said, water could get through the perimeter if not completely sealed. Also vinyl is naturally slippery when wet so this may not be the best option. For our recommended shower floor, please check out our Soft Flex Tiles.
How many different plank patterns are there in a case? If these are installed over a large area, would the wood pattern seem too repetitive?
